Giouvarlakia in tomato sauce

Ingredients 
for 5 servings
1 kg minced beef
1 onion, grated on coarse side of grater
1 cup rice Carolina ( medium grain) rice
1/3 cup olive oil + 2 tablespoons extra
500 grams. slightly concentrated tomato juice
1 bunch parsley, finely 
2 tbs of chicken powder stock
Salt Pepper
Place the ground beef in a large bowl and add the rice, onion, parsley. Also add 2 tablespoons olive oil, 1/2 cup warm water and salt and pepper according to your taste. Knead the mixture with your hands and mold in to smal oblong shapes giouvarlakia.
Heat the remaining olive oil in a large saucepan and add the tomato juice. Season with salt and just started to boil, add the chicken stock and giouvarlakia. Fill with more hot water as needed in order to cover the food and cook over medium-high heat for about 1 hour until most liquid has evaporated and the sauce thickens.
Serve giouvarlakia with abundant sauce and ideals Serve with a green salad, feta cheese and fresh bread.
